Can you share the story behind your restaurant’s inception? What inspired its concept and cuisine?

“TANG was born from a vision to redefine luxury dining,” says Nicky Van der Walt. “Where tradition and contemporary elegance harmonize.” The name draws from the illustrious Tang dynasty, symbolizing our dedication to sophistication, innovation, and a global sensibility.

More than just a restaurant, TANG is a curated experience—an ode to culinary craftsmanship. Inspired by the convivial spirit of modern Japanese izakayas, our menu encourages sharing and connection, elevated with Cantonese influences that emphasize bold flavors and timeless techniques. Every visit promises a sensory journey where every detail tells a story.

Since opening, how has your restaurant evolved? What core values guide your culinary journey?

“Since opening,” Van der Walt reflects, “TANG has continuously evolved—refining offerings, exploring new flavors, and deepening our connections with guests.”

What started as a bold vision of luxury dining has become a destination shaped by constant learning and creative exploration. The three core values guiding us are:

“These principles keep us grounded,” he adds, “while allowing us to grow purposefully.”

How would you describe your culinary philosophy and approach?

“We believe dining should be fully immersive,” Van der Walt explains. “Every moment should awaken the senses and leave a lasting impression.”

Our approach blends meticulous attention to detail with a passion for innovation and cultural richness. Every dish is designed to evoke emotion, reflect elegance, and showcase Asian artistry. Our goal is for each guest to leave inspired—moved by flavors, ambiance, and a sense of luxury that endures.

What innovative techniques and presentation styles set TANG apart?

“At TANG,” Van der Walt states, “innovation is in the details—where plating is performance, and dining is multisensory.”

The immersive presentation—tableside theatrics, artistic plating—creates an intimate escape. The emphasis on authenticity and quality is unwavering: “We source ingredients directly from trusted suppliers in Japan and China, ensuring genuine flavors and excellence in every dish.”

How does TANG promote sustainable sourcing and eco-conscious practices?

“Sustainability is integral to our philosophy,” Van der Walt affirms. “We follow a ‘no waste’ approach, sourcing from responsible farms and fisheries aligned with our values.”

This includes eco-conscious packaging, portion control, and energy-efficient operations—striving to reduce our footprint while maintaining culinary excellence.

Are there community or social initiatives you actively support?

“At TANG, we believe in giving back beyond the dining experience,” Van der Walt states. “We support a number of charitable organizations and children’s hospitals, contributing to causes aligned with our values of care and compassion.”

He adds, “We’re also passionate about nurturing the next generation of hospitality talent through apprenticeship programs. These initiatives allow young professionals to gain hands-on experience and build meaningful careers.”

Are there upcoming menu launches or concepts you’re excited to introduce?

“Yes, we’re thrilled to soon unveil our Kaiseki 5- and 6-course menus,” he shares. “These refined offerings will showcase seasonal ingredients, artistic plating, and a harmonious culinary journey—an elevated expression of modern Asian cuisine.”

What does winning “Restaurant of the Year” mean to you and your team?

“It’s an incredible honor,” he declares, “and a recognition of our team’s dedication, creativity, and pursuit of excellence.”

He continues, “This award not only celebrates what we’ve achieved but also motivates us to push further—setting new standards in luxury dining. It’s a powerful reminder of the passion and purpose that fuel our work.”

What advice would you give to other restaurateurs aiming for excellence in luxury dining?

“Stay humble, stay hungry,” he advises. “Refine your craft constantly, push boundaries with purpose, and always keep your brand authentic. Treat every guest and team member with genuine respect. Success is about consistency and creating meaningful experiences. And above all—NEVER GIVE UP.”
